Garlic causes red blood cells to produce excess hydrogen sulfide.  Hydrogen Sulfide is a natural antioxidant that our bodies produce to help cleanse ourselves of free radicals and possibly help aid in the prevention of some cancers and cardiovascular diseases.  Hydrogen sulfide also aids in the relaxation of blood vessels, which increases blood flow and decreases the amount of work the heart needs to do.
 

How Much Do You Need?

The health benefits of garlic can be achieved with as little as 2 cloves of garlic each day!  This may sound like a lot, but in some countries, such as Italy, Korea and China, 8-12 cloves of garlic are consumed per day per capita!  Put a little garlic in each meal; breakfast quiche or frittata, hummus for a snack, pesto and other spreads, etc.  Every little bit helps!

Black Garlic... What Is It?

Black garlic is a product that is made by “fermenting” the garlic at a constant temperature for several weeks.  The garlic is transformed into a sweet and mild garlic that is not dry at all, but rather moist with a gummy texture.  During the process, the amino acids and sugars in the garlic react to form a new molecule called melanoidin; this is the same compound that is found in malted barley, bread crusts, bakery products and coffee.  Thusly, black garlic is a great ingredient in most recipes that pair well with artisan breads, charcuterie and beer!  Black Garlic also has nearly twice the health benefits than garlic because of the concentration of nutrients and antioxidant promoting compounds.
